Vegan Poke Bowl

Ingredients
1 tbsp sesame oil, plus more for serving
1 package Nasoya Sesame Ginger TofuBaked, cubed
1 tbsp low sodium soy sauce
2 tbsp nori, cut in strips
black sesame seeds, to taste
2 cups cooked rice
1 cup cooked edamame
2 carrots, peeled
2 avocados, sliced
2 green onions, chopped
pickled ginger, for serving
FOR THE SPICY MAYO:
1/3 cup vegan mayo
1-2 tbsp sriracha, to taste
2 tsp low sodium soy sauce

Preparation
- Heat the sesame oil over medium heat. Add the tofu and soy sauce. Cook for 3-5 minutes, or until slightly crispy. Transfer to a bowl and toss with the nori, a pinch of sesame seeds and a little more sesame oil.
- Combine the spicy mayo ingredients in a bowl and set aside.
- To assemble, layer rice, tofu, edamame, carrots, avocado and green onion in each bowl. Drizzle with spicy mayo and more sesame seeds. Serve with the pickled ginger on the side.
