Vegan Kimchi Grilled Cheese

1 cup Nasoya Mild Kimchi

2 tbsp vegan butter at room temperature

1 garlic clove, minced

4 slices of thick cut sourdough or whole grain bread

4 slices of vegan cheddar cheese

2 slices of vegan swiss cheese

1/2 cup arugula

2 tsp vegan butter for cooking

1 tbsp agave nectar for serving

Preparation

  1. Mix together butter and garlic in a small bowl. Spread the butter on the outside of each bread slice.
  2. To make each sandwich, layer the side without garlic butter with 2 slices of cheddar cheese, 1 slice of swiss cheese, kimchi, and arugula. Add the top piece of bread with the butter side facing up.
  3. In a large skillet melt vegan butter over medium heat. One at a time cook the sandwiches in the skillet until golden brown and crispy, 5 minutes on each side.
  4. Transfer grilled cheese to a plate and drizzle with agave before serving.
