Ingredients
- 2 packages Nasoya Plantspired Breakfast Scramble Superfood Skillet
- 2 teaspoons avocado or olive oil
- 2 small bell peppers, any color, stemmed seeded, and diced
- 5 oz baby spinach
- 1 1/2 cups cooked black beans
- 1 large Hass avocado, cubed
- 1/2 cup pico de gallo

Preparation
- Heat a nonstick skillet or frying pan over medium low heat. Add the Nasoya Plantspired Breakfast Scramble Superfood Skillet and cook for five minutes, stirring often.
- Remove the scramble from the skillet and wipe the skillet clean. Return it to medium heat. Add the two teaspoons of oil to the skillet. Add the peppers. Sauté the peppers for 5 minutes, or until they’re tender. Add the spinach to the skillet in handfuls. Sauté the spinach and peppers for a few more minutes, until the spinach is wilted but still a vibrant green color. Remove the vegetables from the skillet.
- Pile a quarter of the scramble into one of your wraps. Top with a quarter each of the vegetables, black beans, avocado, and pico de gallo. Tuck in the sides of the wrap tightly, then roll the wrap up and slice it in half.
- Enjoy right away, or store in an airtight container in the fridge for up to two days.
