Ingredients

For the bagel sandwich:

  • 1 package Nasoya Teriyaki Tofu Baked, sliced thinly lengthwise  
  • Sesame bagel, toasted 
  • Cucumber slices  
  • Tomato, thickly sliced  
  • Avocado, smashed  
  • Microgreens  

For the Silken Tofu Cream Cheese:  

  • 1 package Nasoya Firm Tofu 
  • 2 tablespoons apple cider vinegar 
  • 1/4 cup refined coconut oil melted 
  • 1 teaspoon nutritional yeast 
  • 1 teaspoon salt 
  • 4 tablespoons chopped chives 
  • 4 tablespoons chopped scallions

Preparation

  1. To make the cream cheese: Remove the tofu from the package and pat dry with a clean tea towel. Let it come to room temperature for about 30 minutes if possible. Break the tofu into large chunks. Place the tofu, lemon juice, melted coconut oil, nutritional yeast and salt in a food processor and process until smooth and creamy. Add chives and scallions and mix again.
  2. Assemble ingredients on the bagel to your liking!
