Tofu with Maple Brown Sugar Glaze

Ingredients

  • 1 package Nasoya Extra Firm Tofu 

Marinade: 

  • 1/4 cup olive oil
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp maple syrup
  • 2 tbsp dark brown sugar
  • 1 and 1/2 tbsp liquid smoke
  • 1 tsp prepared mustard
  • 1 tsp smoked paprika
  • 2 tsp garlic powder (or use 3 cloves fresh garlic, minced or grated)
  • 2 tsp onion powder
  • 1/2 tsp ground black pepper

Glaze: 

  • ½ cup maple syrup 
  • ¼ cup brown sugar 
  • 1 tbsp Dijon mustard 
  • ¼ tsp cinnamon 
  • ½ tsp ginger 
  • 2 springs rosemary

Preparation

  1. Press Extra Firm Tofu thoroughly – at least 30 minutes.
  2. Cut cross-hatched diagonal strips (but don’t go all the way through!)
  3. Combine ingredients for marinade in a bowl. Pour over block of tofu in a sealable container. Marinate for at least 24 hours, flipping every so often.
  4. Combine glaze ingredients in a small saucepan. Cook until reduced, stirring often – about 5 minutes.
  5. Place on baking sheet & bake for 30 min in 375° oven.
  6. After 30 minutes, take tofu out of oven to brush on glaze. Bake for 5 more minutes and repeat until a thick layer of glaze forms.
  7. Remove from oven one last time, brush glaze once more and then let rest.
