Tofu with Maple Brown Sugar Glaze

Ingredients
- 1 package Nasoya Extra Firm Tofu
Marinade:
- 1/4 cup olive oil
- 1/4 cup low-sodium soy sauce
- 2 tbsp maple syrup
- 2 tbsp dark brown sugar
- 1 and 1/2 tbsp liquid smoke
- 1 tsp prepared mustard
- 1 tsp smoked paprika
- 2 tsp garlic powder (or use 3 cloves fresh garlic, minced or grated)
- 2 tsp onion powder
- 1/2 tsp ground black pepper
Glaze:
- ½ cup maple syrup
- ¼ cup brown sugar
- 1 tbsp Dijon mustard
- ¼ tsp cinnamon
- ½ tsp ginger
- 2 springs rosemary

Preparation
- Press Extra Firm Tofu thoroughly – at least 30 minutes.
- Cut cross-hatched diagonal strips (but don’t go all the way through!)
- Combine ingredients for marinade in a bowl. Pour over block of tofu in a sealable container. Marinate for at least 24 hours, flipping every so often.
- Combine glaze ingredients in a small saucepan. Cook until reduced, stirring often – about 5 minutes.
- Place on baking sheet & bake for 30 min in 375° oven.
- After 30 minutes, take tofu out of oven to brush on glaze. Bake for 5 more minutes and repeat until a thick layer of glaze forms.
- Remove from oven one last time, brush glaze once more and then let rest.
