Ingredients
- 1 package Nasoya Super Firm Tofu, cubed
- 8 brussels sprouts, halved
- ½ head cauliflower, sliced
- 1 large beet, sliced
- 1 acorn squash, halved and sliced
- 1 large sweet potato, cut into half-moon shapes
- 2 heads of garlic, halved
- Fresh thyme
- Fresh rosemary
- Fresh sage
- 3 tsp maple syrup
- 1 tbsp miso paste
- ¼ cup tahini
- 2 tbsp lemon juice
- 2 tbsp warm water
- Olive oil
- Salt & pepper

Preparation
- Wash and chop all vegetables, adding to a large mixing bowl.
- Cube tofu and add to a separate mixing bowl.
- Drizzle vegetables with olive oil, salt, and pepper. Mix until coated. Spread onto a large baking sheet along with the fresh herbs.
- Coat tofu with olive oil, salt, and pepper. Add to baking sheet.
- Roast for 35 minutes until tender and golden brown.
- Combine tahini, miso, maple syrup, lemon juice, and water. Mix until smooth. Drizzle over roasted vegetables.
