Ingredients

  • 1 package Nasoya Super Firm Tofu, cubed 
  • 8 brussels sprouts, halved
  • ½ head cauliflower, sliced
  • 1 large beet, sliced 
  • 1 acorn squash, halved and sliced 
  • 1 large sweet potato, cut into half-moon shapes 
  • 2 heads of garlic, halved 
  • Fresh thyme 
  • Fresh rosemary 
  • Fresh sage 
  • 3 tsp maple syrup
  • 1 tbsp miso paste 
  • ¼ cup tahini 
  • 2 tbsp lemon juice 
  • 2 tbsp warm water
  • Olive oil 
  • Salt & pepper

Preparation

  1. Wash and chop all vegetables, adding to a large mixing bowl.
  2. Cube tofu and add to a separate mixing bowl.
  3. Drizzle vegetables with olive oil, salt, and pepper. Mix until coated. Spread onto a large baking sheet along with the fresh herbs.
  4. Coat tofu with olive oil, salt, and pepper. Add to baking sheet.
  5. Roast for 35 minutes until tender and golden brown.
  6. Combine tahini, miso, maple syrup, lemon juice, and water. Mix until smooth. Drizzle over roasted vegetables.
