“Steak” + “Eggs” Benedict

  • 1 package Nasoya Plantspired Breakfast Scramble 
  • 2 english muffins, sliced and toasted 
  • Fresh thyme, to garnish

“Steak” hash:

  • 1 package Nasoya Plantspired Steak 
  • 1 lb gold potatoes, diced small
  • 1 red pepper, diced small
  • 1/2 medium yellow onion, diced small
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Vegan hollandaise sauce:

  • 1 ½ tbsp vegan butter
  • 1 tbsp all-purpose flour
  • ½ cup unsweetened plain almond milk
  • ¼ cup water
  • 1 tsp lemon juice
  • 1 tsp dijon mustard
  • ⅛ tsp sea salt (plus more to taste)
  • ⅛ tsp garlic powder
  • 1½ tsp nutritional yeast

Preparation

  1. To make hollandaise sauce: Heat vegan butter in a large rimmed skillet over medium heat. Once melted, turn off the heat and whisk in flour until no lumps remain. Add the almond milk, water, lemon juice, dijon, salt, garlic powder, and nutritional yeast and whisk to combine. Heat over low-medium heat, whisking frequently, until thickened — about 3-5 minutes (keeping in mind it will continue thickening as it cools). Taste and adjust as needed, adding more salt to taste, nutritional yeast for cheesiness and yellow color, lemon juice for brightness, or garlic powder for more savory notes. Serve warm.
  2. To make the hash: Prepare Plantspired Steak according to package instructions. In a hot pan, add a tablespoon of oil to the pan. Stir in the onions, peppers and potatoes, then sprinkle the smoked paprika, salt and pepper and stir until combined. Cook, stirring occasionally, until the peppers and onions are soft and the potatoes are crispy and fork-tender, 8-10 minutes. Turn the heat down to medium-low and cube the steak into bite-sized pieces. Add the steak to the hash and stir well to combine.
  3. Assemble the eggs benedict: Prepare the Plantspired Breakfast Scramble according to package instruction. On top of a toasted english muffin, spoon a helping of steak hash. Top with Breakfast Scramble & a generous drizzle of hollandaise sauce. Garnish with thyme.
