Spinach Artichoke Won Ton Cups

Ingredients

1 tbsp olive oil

3 cloves garlic, diced

12 oz jar marinated artichoke hearts, drained & chopped

4 cups baby spinach, chopped

¼ cup vegan mayo

8 oz vegan cream cheese

½ tsp garlic powder

¼ cup vegan parmesan

salt & pepper, to taste

non-stick spray

24 Nasoya Vegan Won Ton Wraps

fresh chives, for serving

Preparation

  1. Preheat the oven to 375 degrees.
  2. Heat the olive oil in a skillet over medium heat. Add the garlic and cook for 1 minute. Add the artichoke hearts & spinach and cook until the spinach has wilted. Stir in the mayo, cream cheese, garlic powder and parmesan. Once thoroughly combined, season with salt and pepper. Remove from the heat.
  3. Spray a muffin tin with non-stick spray and gently press one won ton wrapper into each slot. Place in the oven for 5 minutes. Remove from the oven and add 1 tablespoon of filling to each cup. Place back in the oven for 10 minutes. Repeat with the remaining ingredients (or use 2 muffin tins at the same time).
  4. Serve hot (or at room temperature) with fresh chives on top.
