SPICY VEGAN FRENCH MACARONS

Ingredients

Shells:
Aquafaba, reduced 100 gm.
Cream of Tartar ¼ tsp.
Caster Sugar 100 gm.
Almond Flour, sieved 100 gm.
Confectioners’ Sugar, sieved 100 gm.

Orange Sauce:
Soy Sauce 1 ½ Tbsp.
Apple Cider Vinegar 1 ½ Tbsp.
Orange Juice 1 ½ Tbsp.
Brown Sugar 1 ½ Tbsp.
Corn Starch ½ Tbsp.
Red Pepper Flakes Pinch

Whipped Tofu:
Tofu, silken, brunoised 1 Package
Lemon Juice to taste
Salt & Pepper to taste
Orange Sauce 4 Tbsp.

Sauteed Mushrooms, Peppers, and Tofu Filling:
Button Mushrooms, brunoised 4.4 oz.
Red Bell Pepper, brunoised 2 oz.
Garlic, minced ½ clove
Ginger, minced 1 oz.
Spring Onions, minced Pinch
Sweet Chili Sauce 1 tsp.
Tofu, silken brunoised 1 block
Salt & Pepper to taste

 

Preparation

  1. Reduce Aquafaba over medium low for one hour, or until reduced by ½. Set aside and cool.
  2. Add aquafaba to mixing bowl along with cream of tartar and whip to soft peaks, around 10 minutes.
  3. Sieve confectioners' sugar and almond flour, set aside.
  4. Add caster sugar to aquafaba and whip until it reaches stiff peaks.
  5. Add dry ingredients in two additions to the meringue and fold until you can form an 8.’
  6. Divide batter into two and add colorings. Fold until just incorporated.
  7. Pipe macarons and slam sheet tray on table until all air bubbles are knocked out, using a toothpick gently if necessary.
  8. Allow macarons to dry at room temperature, uncovered, for 40 minutes or until a skin has developed.
  9. Preheat oven to 275° F.
  10. Coat ¼ of the tofu in corn starch, set aside.
  11. In a large pan, heat oil and add garlic, spring onions, and ginger. Cook for about a minute. Add mushrooms, tofu, and peppers and cook on high heat for another minute.
  12. Add chili sauce and seasonings and cook 4-5 minutes longer. Taste and adjust seasoning, set aside to cool.
  13. To make whipped tofu filling, place ¾ of the tofu in a bowl along with orange sauce, lemon juice, and salt. Mix until uniformly mixed.
  14. Bake macarons for 18 minutes.
  15. When macarons have cooled properly, pipe a ring of whipped tofu around the outside and fill inside with 1tsp of filling. Top with another macaron.
