Ingredients
- 1 pack Plantspired Classic Bolognese
- 16 oz. Mezzi Rigatoni
- 1 cup sauteed zucchini, ¼ inch slices
- 1 cup sauteed yellow squash, ¼ inch slices
- ¼ cup vegan parmesan cheese (optional)
- Basil
Preparation
- Bring a large pot of water to a boil. Add pasta and cook per packaging instructions.
- While pasta is cooking, add oil to pan and saute zucchini and yellow squash over medium heat until lightly browned, tossing occasionally. Season with salt and pepper.
- Add Plantspired Classic Bolognese, cook until heated through.
- Toss pasta with zucchini and pasta sauce. Top with vegan parmesan and basil. Enjoy!
