Quick & Easy Veggie Bolognese

Ingredients

  • 1 pack Plantspired Classic Bolognese
  • 16 oz. Mezzi Rigatoni
  • 1 cup sauteed zucchini, ¼ inch slices
  • 1 cup sauteed yellow squash, ¼ inch slices
  • ¼ cup vegan parmesan cheese (optional)
  • Basil

Preparation

  1. Bring a large pot of water to a boil. Add pasta and cook per packaging instructions.
  2. While pasta is cooking, add oil to pan and saute zucchini and yellow squash over medium heat until lightly browned, tossing occasionally. Season with salt and pepper.
  3. Add Plantspired Classic Bolognese, cook until heated through.
  4. Toss pasta with zucchini and pasta sauce. Top with vegan parmesan and basil. Enjoy!
