BBQ Tofu Tacos with Jalapeno Crema

BBQ Tofu:

Nasoya Sweet BBQ Tofubaked

BBQ sauce

Olive oil

Caramelized Shallots: 

1/2 Tbsp olive oil

2 shallots sliced

Salt & Pepper

Charred Corn: 

1 head of corn, de-cobbed

2tsp butter

Salt & Pepper

Jalapeno Crema:

1/4 cup of dairy free sour cream

1 Tbsp lime juice

1 Tbsp minced fresh jalapeno

1/4 – 1/2 of pepper

Salt & Pepper

Avocado Mash: 

Avocado

Salt & Pepper

Garlic Powder

Cayenne Pepper

Preparation

  1. BBQ TOFU:
  2. Remove the tofu slabs from packaging, reserving the extra BBQ sauce for later. Slice tofu into small cubes. Cook in 1/2 Tbsp olive oil over medium heat tossing occasionally until browned and crispy. Add in extra BBQ sauce at the end of cooking!
  3. CARAMELIZED SHALLOTS:
  4. Add Shallots and olive to a sauté pan over medium heat. Cook for a few minutes. Add Salt & Pepper. Cook for 10mins until golden and caramelized,
  5. CHARRED CORN:
  6. Over medium heat, cook corm with butter and salt & pepper tossing occasionally until softened and slightly charred.
