Plantspired Breakfast Scramble Burritos

Ingredients

  • 1 package Nasoya Plantspired Breakfast Scramble
  • 1 red potato, diced
  • 1 vidalia onion, diced
  • 1 red bell pepper, diced
  • 1 can black beans
  • 1 ripe avocado
  • Salsa fresca
  • Burrito tortillas
  • Pepper jack cheese, sliced 

 

Preparation

  1. Heat contents of Breakfast Scramble packet in skillet over medium heat for approximately 3 minutes. No need for water/oil. Remove from the pan and set aside.
  2. Empty can of black beans into the skillet and stir until heated through, about 3 minutes. Remove from pan, set aside and wipe pan.
  3. Add 1 tablespoon of oil to the same skillet and turn up the heat to high. Add the potatoes, onion, red pepper, and some salt and pepper. Cook, stirring occasionally, for 3 to 4 minutes. Deglaze the pan with 1/4 cup of water, then put the lid on and steam for 1 to 2 minutes.
  4. Assemble burritos: spoon about 1/4 cup of the Breakfast Scramble into the center of the burrito. Top with 1/4 cup of the vegetable medley, ¼ cup of black beans, a few slices of pepper jack, avocado, and salsa fresca.
  5. Fold in the sides of the tortilla over the filling and roll, tucking in the edges as you go.
  6. Lightly coat a clean pan with oil and set the heat to medium. When the pan is hot, add the burritos, seam side down. Cook, covered, until the bottom of the burritos are golden brown, about 3 minutes. Flip the burritos over and continue cooking, covered, until golden, a few minutes more.
