Lemon Pepper Tofu Grain Bowl

Ingredients
- 1 cup quinoa
- 3 cups water
- 1/2 cup pickled red onions
- Tahini dressing
- Chickpeas
- Edamame
Lemon Pepper Tofu
- 1/2 package Nasoya Extra Firm Tofu
- 3 tbsp lemon pepper seasoning
Roasted Broccoli
- 2 cups frozen broccoli
- 1 tbsp olive oil
- 1 tbsp lemon juice
- pinch salt

Preparation
- Preheat oven to 400F.
- Press your tofu for at least 15 minutes before cutting into cubes. Toss in a bowl with lemon pepper seasoning.
- Spread your broccoli on a baking sheet. Drizzle with olive oil, lemon juice, salt & pepper.
- On the same baking sheet, place tofu cubes in a single layer.
- Bake for 20 minute or until golden and crispy.
- In the meantime, cook quinoa according to instructions. Assemble your bowl and enjoy.
