Lemon Pepper Tofu Grain Bowl

Ingredients

  • 1 cup quinoa
  • 3 cups water
  • 1/2 cup pickled red onions
  • Tahini dressing
  • Chickpeas
  • Edamame 

Lemon Pepper Tofu

  • 1/2 package Nasoya Extra Firm Tofu
  • 3 tbsp lemon pepper seasoning

Roasted Broccoli

  • 2 cups frozen broccoli
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • pinch salt

Preparation

  1. Preheat oven to 400F.
  2. Press your tofu for at least 15 minutes before cutting into cubes. Toss in a bowl with lemon pepper seasoning.
  3. Spread your broccoli on a baking sheet. Drizzle with olive oil, lemon juice, salt & pepper.
  4. On the same baking sheet, place tofu cubes in a single layer.
  5. Bake for 20 minute or until golden and crispy.
  6. In the meantime, cook quinoa according to instructions. Assemble your bowl and enjoy.
