Korean-Inspired Elote

Ingredients

1/2 cup Nasoya Spicy Kimchi, drained

1/2 cup vegan mayo

4 ears corn, shucked

Everything but the bagel seasoning, to taste

2 green onions, chopped

Lime wedges, for serving

Preparation

  1. Combine the kimchi and mayo in a food processor. Pulse until combined and set aside.
  2. Heat a grill to medium-high heat. Place the corn on the grill and cook until charred on all sides. Remove from the grill and allow to cool for a couple minutes.
  3. Brush the corn with the kimchi mayo. Sprinkle on everything but the bagel seasoning and green onion. Serve with lime wedges on the side.
