Hummus Crusted Tofu Steak Tray Bake

Ingredients

1/2 block of Nasoya super firm tofu, sliced into tofu steaks

1/2c hummus – you can use any flavor, i used roasted garlic

2c fresh green beans

1c grape/cherry tomatoes

1/2 Tbsp olive oil

1/2 lemon juice

1/4 Tbsp garlic powder

1/4 Tbsp onion powder

1/4 Tbsp nutritional yeast

salt to taste

Preparation

  1. Slice tofu into steaks and rub with hummus
  2. Place veggies on a baking sheet, toss with olive oil, lemon juice and seasoning
  3. Nestle tofu steaks in the center of the veggies and bake for 20-25min at 350 degrees until veggies are done and tofu is crispy (I turned on the broiler at the end to get a little more color)
  4. You can sub in your favorite hummus, veggies, and seasonings. Versatile for what you have on hand. (I served mines with rice and a little extra hummus thinned with lemon juice as a sauce.
