Ingredients
- Nasoya Extra Firm Tofu
- Red Beets (cooked)
- Watermelon
- Peaches
- Cucumbers
- Blackberries
- Purple Onion
- Black Olives
- Fresh Basil Leaves
- Capers
Dressing
- 1/4 cup olive oil
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- Chopped fresh basil
- 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground pepper
Preparation
- Cut tofu, beets, watermelon, peaches & cucumbers into 1-inch cubes.
- Combine dressing ingredients and stir well.
- Arrange salad ingredients on a plate, alternating to create a checkerboard pattern.
- Drizzle the cubed salad with dressing and then sprinkle with olives, basil and capers.
