Ingredients

1 package Nasoya Mexican style superfood skillets

1 red bell pepper, diced

1 green bell pepper, diced

1 yellow bell pepper, diced

1 orange bell pepper, diced

1 cucumber, diced

1 red onion, diced

1 avocado, diced

1 mango, diced

1 can black beans, drained

1 can pinto beans, drained

1 can corn, roasted

1 can olives, chopped

vegan feta cheese

Dressing:

juice of 3 limes

¼ cup red wine vinegar

½ cup olive oil

½ package taco seasoning

spicy honey, for taste

Preparation

  1. Combine all ingredients in a large bowl. Toss well so that ingredients are well-combined.
  2. In a separate bowl, whisk together dressing ingredients.
  3. Pour dressing over other ingredients and toss very well.
