Bibim Mandu (Vegan Dumpling Salad)

Ingredients

  • Nasoya Korean BBQ Dumplings 
  • Lettuce, chopped
  • Red cabbage, chopped
  • Cucumber, sliced into matchsticks 
  • Carrot, sliced into matchsticks 

Sweet & Sour Dressing

  • 1 tbsp gochujang
  • 2 tbsp rice vinegar 
  • 1 tbsp soy sauce 
  • 1 tbsp honey 
  • 1 tbsp raw sugar 
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds

Preparation

  1. Clean, wash, and cut all vegetables.
  2. Prepare the dressing by mixing ingredients in a bowl.
  3. Pan fry the dumplings according to package instructions.
  4. Combine dumplings, vegetables, and dressing in a large mixing bowl and toss to coat well. Mix and serve right away to maintain crunch.
