4 Honey Garlic Fried Chick’n & Scallion Waffles

Ingredients

For the Fried Chick’n: 

  • 2 packages Honey Garlic Plantspired Chick’n 
  • 1 cup of Flour  
  • ½ cup of Corn Starch  
  • ½ tbsp of Onion Powder  
  • ½ tbsp of Garlic Powder  
  • 1 tsp of Baking Powder  
  • 1 cup of cold Water  

For the Scallion Waffles: 

  • 12 ounces silken tofu (2 cups crumbled) 
  • ½ cup water 
  • ¼ cup vegetable oil, plus more for the waffle iron 
  • Juice of 1/2 lemon (about 1 1/2 tablespoons) 
  • 1 cup flour 
  • 1 tablespoon sugar 
  • 1 teaspoon baking powder 
  • 1/2teaspoon kosher salt 
  • ½ cup shredded vegan cheddar 
  • 4 to 5 dashes hot sauce 
  • 2 to 3 scallions, chopped, whites and greens separated 

For the Gochujang Maple Syrup:  

  • 1/4 cup gochujang 
  • 2 tablespoons maple syrup 

Preparation

  1. In a bowl, mix flour, corn starch, cold water, garlic powder, baking powder, and onion powder till smooth.
  2. Add in the chicken bites and make sure every piece of chicken is coated in the batter.
  3. In a pan, add in oil; once the oil is hot, add in the chicken and fry for 4-5 minutes or until crispy and golden brown.
  4. Optional, but HIGHLY recommended, double fry the chicken for another 1-2 minutes for the extra crispiness.
  5. To make the waffles:
  6. Preheat your waffle iron.
  7. In a blender or food processor, puree the tofu, water, hot sauce, and lemon juice. Slowly drizzle in the vegetable oil with the blender/food processor running.
  8. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  9. Add the tofu mixture to the flour mixture, stirring just until all the flour is moistened. Fold in cheddar and scallions. Lumps are okay.
  10. Combine gochujang and maple syrup, drizzle over the chick’n & waffles! Add water to thin syrup to your desired consistency.
  11. Spray the waffle iron with a pan spray. Cook the batter in the waffle iron: fill it about 2/3 full and cook until the steam significantly subsides, and the waffle is golden and crispy.
