- 1 package Nasoya Sweet n Spicy Glazed Tofu
- 1 cup long grain white rice
- 2.5 cup coconut milk
- 1 can black beans
- Avocado, sliced
- Mango salsa
- Cilantro, to garnish
- Lime, to garnish
Preparation
- Preheat oven to 400 degrees. Remove tofu from packaging, spread in an even layer on a lined baking tray. Bake for 10 minutes until golden brown and caramelized.
- Add the rice to a large mesh strainer and rinse it for 30 seconds, then add it to a large saucepan with the coconut milk. Bring the mixture to a boil, then cover and reduce to a simmer and simmer for approximately 20 minutes until the rice is cooked.
- Add black beans to a small saucepot over medium heat, stirring until heated through.
- Assemble your bowl and enjoy!
