Sweet n Spicy Tofu Rice Bowl

  • 1 package Nasoya Sweet n Spicy Glazed Tofu  
  • 1 cup long grain white rice 
  • 2.5 cup coconut milk 
  • 1 can black beans  
  • Avocado, sliced  
  • Mango salsa  
  • Cilantro, to garnish  
  • Lime, to garnish  

Preparation

  1. Preheat oven to 400 degrees. Remove tofu from packaging, spread in an even layer on a lined baking tray. Bake for 10 minutes until golden brown and caramelized.
  2. Add the rice to a large mesh strainer and rinse it for 30 seconds, then add it to a large saucepan with the coconut milk. Bring the mixture to a boil, then cover and reduce to a simmer and simmer for approximately 20 minutes until the rice is cooked.
  3. Add black beans to a small saucepot over medium heat, stirring until heated through.
  4. Assemble your bowl and enjoy!
