Sweet Chili Tofu Buddha Bowls

Ingredients

2 packages Nasoya Sweet Chili Toss’ables  

1 c quinoa 

1 ¾ c water  

2 c pineapple, diced 

1 c red bell pepper, diced  

1 c carrot, shredded 

1 c purple cabbage, shredded   

3 c kale, massaged with oil and chopped finely   

2 c bean sprouts  

Lime, for garnish  

Green onions, chopped for garnish 

Cilantro, chopped for garnish  

Preparation

  1. Bring the water and quinoa to a boil, reduce the heat and simmer, covered, until the quinoa is tender and has absorbed the water, about 15-20 minutes, remove from heat and let sit for 5 minutes, covered, before letting cool.
  2. Meanwhile, assemble the bowl and enjoy!
