2 tbsp vegan butter

1 package Nasoya Super Firm Tofu, drained 

1 tsp garlic powder

1 tsp onion powder

1 tsp turmeric

½ tsp pepper

Salt, to taste

2 tbsp non-dairy milk, unsweetened

Chives, chopped

4 large flour tortillas

2 avocados

2 tomatoes, sliced

2 cups spinach

Oil, for frying

Hot sauce, for serving

Preparation

  1. Melt the vegan butter in a skillet over medium heat. Add the tofu and crumble with a wooden spoon. Add the garlic powder, onion powder, turmeric, pepper & salt. Toss and cook for 2 minutes. Pour in the non-dairy milk and cook for another minute. Remove from the heat and top with chives.
  2. To assemble, lay a tortilla on a flat surface and use a knife to cut a slit from the center of the tortilla to the bottom – creating 4 quadrants.
  3. Starting in the bottom left quadrant and working clockwise, add smashed avocado, tofu, tomato slices & spinach – adding one ingredient to each quadrant. Following the same path, fold the bottom left corner up then around until you have all sides folded in. Repeat with remaining wraps.
  4. Heat a thin layer of oil in a skillet over medium heat. Place the wrap in the skillet and cook until browned on both sides. Remove from the pan and repeat with remaining wraps. Serve hot with hot sauce.
