Burrito-Inspired Skillet Meal

Ingredients

  • 2 teaspoons olive oil
  • 1 small white onion, diced
  • 8 cloves fresh minced garlic
  • ¼ cup fresh minced cilantro
  • 1 (15-ounce) can of pinto beans, drained and rinsed
  • 1 (7-ounce) can chopped green chilies
  • 1 cup uncooked long grain rice
  • 1 packet vegan-friendly taco seasoning
  • Juice of 1 lime
  • 2 (7-ounce) packages of Nasoya Plantspired Mexican-Style Superfood Skillets
  • 1 cup vegetable broth
  • ½ cup Mexican-style tomato sauce
  • 1 (15-ouce) can diced fire roasted tomatoes, with their juices
  • Kosher salt, to taste
  • Fresh cracked black pepper, to taste
  • 1 cup vegan cheese shreds, optional

Garnishes:

  • Cashew sour cream
  • Shredded lettuce
  • Thinly sliced avocados
  • Pico de gallo
  • Thinly sliced radish
  • Hot sauce, for serving
  • Tortilla chips or warmed tortillas, optional, for serving

Preparation

  1. Preheat the oven to 400°F.
  2. Heat the oil in a large, oven-safe skillet over medium heat. Once the oil is hot, add the onion, garlic, and cilantro and cook until the onion is translucent, 1 to 2 minutes.
  3. Pour in the beans, chilies, and rice. Season it with the taco seasoning and lime juice, stirring to combine.
  4. Next, toss in the Superfood Skillet packages with the broth, tomato sauce, and roasted tomatoes, stirring to incorporate all the ingredients. Taste and adjust seasonings, adding salt and pepper if necessary (keep in mind the rice will absorb lots of the seasoning packet flavors, so I add about ¾ of a teaspoon of salt and pepper). Increase the heat to high. Once it reaches a simmer, cover, and transfer the skillet to the preheated oven and bake until the rice is tender, 20 to 25 minutes. If adding cheese, sprinkle it on halfway through and cover to finish baking.
  5. Top with your preferred garnishes and enjoy!

  7. If you don’t have an oven-safe skillet, you can cook the skillet meal according to the directions, then transfer it to a prepared oven-safe dish. Cover with a lid or foil and bake according to the rest of the directions.
