Sweet BBQ Tofu Chopped Mason Jar Salad

Ingredients

  • ½ cup vegan ranch
  • ¼ cup vegan-friendly BBQ sauce
  • 1 (7-ounce) package Nasoya Sweet BBQ TofuBaked, cut into 1-inch cubes
  • 1 cup black beans
  • 1 cup roasted corn
  • ½ cup thinly sliced red onion
  • 1 cup chopped tomatoes
  • ½ cup vegan cheddar cheese shreds
  • 3 cup shredded lettuce
  • ½ cup crispy tortilla strips
  • Chopped cilantro for garnish, optional

Preparation

  1. To prepare the dressing, whisk together the vegan ranch and BBQ sauce until thoroughly combined and pour into the bottom of a 32-ounce mason jar.
  2. Next, add the tofu cubes, beans, corn, onion, tomato, cheese shreds, lettuce, and tortillas strips.
  3. Cover and refrigerate up to 5 days.
  4. When ready, pour the components of the mason jar into a large bowl and toss to combine. Garnish with fresh cilantro and enjoy!
