Vegan Poke Bowl

Ingredients

1 tbsp sesame oil, plus more for serving

1 package Nasoya Sesame Ginger TofuBaked, cubed

1 tbsp low sodium soy sauce

2 tbsp nori, cut in strips

black sesame seeds, to taste

2 cups cooked rice

1 cup cooked edamame

2 carrots, peeled

2 avocados, sliced

2 green onions, chopped

pickled ginger, for serving

FOR THE SPICY MAYO:

1/3 cup vegan mayo

1-2 tbsp sriracha, to taste

2 tsp low sodium soy sauce

Preparation

  1. Heat the sesame oil over medium heat. Add the tofu and soy sauce. Cook for 3-5 minutes, or until slightly crispy. Transfer to a bowl and toss with the nori, a pinch of sesame seeds and a little more sesame oil.
  2. Combine the spicy mayo ingredients in a bowl and set aside.
  3. To assemble, layer rice, tofu, edamame, carrots, avocado and green onion in each bowl. Drizzle with spicy mayo and more sesame seeds. Serve with the pickled ginger on the side.
