Vegan Korean BBQ Steak Bowls

Ingredients

1.5c @nasoya Plantspired Korean BBQ steak

1c cooked sushi rice

1/2c sweet and spicy cucumber salad (recipe below)

1 avocado, sliced

1c sliced purple cabbage

1/4c sliced scallions

2-4tbsp sweet and spicy sauce (recipe below)

sesame seeds, for garnish

 

Sweet and Spicy Cucumber Salad:

1 small cucumber, thinly sliced

1/2 tbsp soy sauce, low sodium

1/2 tbsp gochujang

1/2 tbsp rice vinegar

1/2 tbsp sesame oil

1 clove garlic, minced or grated

 

Sweet and Spicy Sauce:

1tbsp soy sauce, low sodium

1tbsp gochujang

1/2tbsp sugar

1/2tsp rice vinegar

1/2tsp sesame oil

1-2tbsp mayo (optional)

Preparation

  1. Korean BBQ Steak Bowl:
  2. Sauté Plantspired steak in a skillet according to package instructions until cooked to your desired texture. 
  3. Add half of each ingredient to a bowl, top with the desired amount of sauce and sesame seeds and enjoy
  4. Sweet and Spicy Cucumber Salad:
  5. Mix sauce ingredients together. Add cucumber slices and let sit for an hour, shaking occasionally to make sure the pieces are well coated.
  6. Sweet and Spicy Sauce:
  7. Mix ingredients together, taste, and adjust.  If you want a creamy sauce, add mayo.
