Ingredients

Veggie Eggrolls

  • Thanksgiving leftovers: 2 cups roasted veggies 
  • ½ cup vegetable stock 
  • ½ cup stuffing, prepared according to instructions
  • Nasoya Eggroll Wrappers 
  • Dipping sauce: Cranberry sauce

 

Pierogis

  • Thanksgiving leftovers: 2 cups mashed potatoes
  • ½ cup vegan cream cheese 
  • 1 tbsp chives 
  • 1 tbsp onion seasoning 
  • Nasoya Round Wraps
  • Dipping sauce: Sour cream + fresh dill 

 

Sweet Potato Dumplings 

  • Thanksgiving leftovers: 1.5 cups roasted sweet potato, mashed
  • 2 tbsp brown sugar 
  • 1.5 tsp cinnamon
  • Nasoya Wonton Wrappers
  • Dipping sauce: Caramel

Preparation

  1. Veggie Eggrolls - Combine roasted veggies and stuffing. Add vegetable stock as needed to bind filling together. Use 2 tablespoons filling for each egg roll. Fold bottom corner over filling, then fold in side corners. Brush top corner with water and roll up wrap tightly to enclose filling, sealing roll with top flap.
  2. Pierogis - Combine mashed potatoes, cream cheese, and seasonings until smooth. Use 1 tablespoon filling for each round wrap Brush top half edge with water. Fold over to seal.
  3. Sweet Potato Dumplings - Mash together sweet potato, brown sugar, and cinnamon. Use 1 tablespoon filling for each round wrap Brush top half edge with water. Fold over to seal.
