Cubed Tofu Balsamic Salad

Ingredients

  • Nasoya Extra Firm Tofu
  • Red Beets (cooked)
  • Watermelon
  • Peaches
  • Cucumbers
  • Blackberries
  • Purple Onion
  • Black Olives
  • Fresh Basil Leaves
  • Capers
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • Chopped fresh basil
  • 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground pepper

Preparation

  1. Cut tofu, beets, watermelon, peaches & cucumbers into 1-inch cubes.
  2. Combine dressing ingredients and stir well.
  3. Arrange salad ingredients on a plate, alternating to create a checkerboard pattern.
  4. Drizzle the cubed salad with dressing and then sprinkle with olives, basil and capers.
