Veggie Chilli Stuffed Peppers

Ingredients

  • 1 pack Plantspired Hearty Chili
  • 3 Multi-colored peppers
  • 1 can black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • Sliced scallions
  • Cilantro
  • ½ cup vegan sour cream
  • Paprika

Preparation

  1. Preheat oven to 450 F
  2. Rinse and slice peppers lengthwise. Remove seeds.
  3. In a large skillet, heat Plantspired Hearty Chili. Cook until warm. Stir in drained black beans and corn.
  4. Spoon chili mixture into the center of each pepper.
  5. Bake stuffed peppers in the oven for 10-15 minutes. Top with scallions, cilantro, sour cream and paprika as desired. Serve hot.
