Veggie Chilli Stuffed Peppers

Ingredients
- 1 pack Plantspired Hearty Chili
- 3 Multi-colored peppers
- 1 can black beans, rinsed and drained
- 1 cup frozen corn, thawed
- Sliced scallions
- Cilantro
- ½ cup vegan sour cream
- Paprika
Preparation
- Preheat oven to 450 F
- Rinse and slice peppers lengthwise. Remove seeds.
- In a large skillet, heat Plantspired Hearty Chili. Cook until warm. Stir in drained black beans and corn.
- Spoon chili mixture into the center of each pepper.
- Bake stuffed peppers in the oven for 10-15 minutes. Top with scallions, cilantro, sour cream and paprika as desired. Serve hot.
