Bruschetta with Tofu “Feta”

Ingredients

  • Nasoya Extra Firm Tofu 
  • 2 tbsp lemon juice 
  • 1 tbsp olive oil 
  • Diced tomatoes 
  • Basil leaves 
  • Salt and pepper 
  • Garlic
  • Baguette

Preparation

  1. Crumble tofu and add to a bowl with olive oil, salt, pepper and lemon juice
  2. Combine diced tomatoes, olive oil, minced garlic, basil, salt and pepper in a small bowl.
  3. Toast baguette slices
  4. Assemble by spooning tofu mixture on toasted bread and top with tomato mixture.
