Lemon Thyme Baked Tofu Salad

Ingredients
- 1 package Nasoya Firm Tofu
- 3 tbsp soy sauce
- 2 tbsp lemon juice
- 2 tsp olive oil
- Garlic powder
- Black pepper
- Thyme
- Sage
- Rosemary
- Oregano
- Spinach
Preparation
- Press tofu for 15 minutes. Cut into squares.
- Combine soy sauce, olive oil, lemon juice, and seasonings in a bowl.
- Drizzle some olive oil in a frying pan. Sear both sides of each piece of tofu until golden brown.
- Remove tofu from pan and dunk into marinade for 20 minutes.
- Spread tofu slices on a parchment paper lined baking sheet. Pour half of the remaining marinade over tofu slides.
- Bake for 10 minutes. Flip tofu, pouring the remainder of the marinade over the tofu. Bake for 10 more minutes until pieces have crisped and darkened in color.
- Serve on a bed of spinach with lemon and herbs for garnish.
