Lemon Thyme Baked Tofu Salad

Ingredients

  • 1 package Nasoya Firm Tofu 
  • 3 tbsp soy sauce 
  • 2 tbsp lemon juice 
  • 2 tsp olive oil 
  • Garlic powder 
  • Black pepper 
  • Thyme 
  • Sage
  • Rosemary 
  • Oregano 
  • Spinach

Preparation

  1. Press tofu for 15 minutes. Cut into squares.
  2. Combine soy sauce, olive oil, lemon juice, and seasonings in a bowl.
  3. Drizzle some olive oil in a frying pan. Sear both sides of each piece of tofu until golden brown.
  4. Remove tofu from pan and dunk into marinade for 20 minutes.
  5. Spread tofu slices on a parchment paper lined baking sheet. Pour half of the remaining marinade over tofu slides.
  6. Bake for 10 minutes. Flip tofu, pouring the remainder of the marinade over the tofu. Bake for 10 more minutes until pieces have crisped and darkened in color.
  7. Serve on a bed of spinach with lemon and herbs for garnish.
